For the International Week of Italian Cuisine in the World, the Ministry of Foreign Affairs supports the project by ALMA (International School of Italian Cuisine) and the University of Parma, aimed at offering new perspectives on regional Italian recipes. A web series of five videos focuses particularly on the nutritional profile and environmental sustainability of Italian cuisine. The journey begins with the scientific analysis of a famous recipe book from the 1970s, developing a narrative built around five simple gestures, each linked to ingredients and fundamental values of Italian culture.
The digital recipe book, accessible free of charge, contains 15 recipes and is available in both Italian and English versions.
